Ingredients

  • 6 eggs
  • 1/2 ripe avocado
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • Salt and pepper, to taste
  • Paprika, for garnish

Directions

  1. Bring a large pot of water to a boil.
  2. Gently lower the eggs into the boiling water. Reduce the heat to medium-low and simmer for 12 minutes.
  3. Drain the eggs and run cold water over them for 1 minute. Let cool.
  4. Peel the eggs and slice them in half lengthwise. Remove the egg yolks and add them to a medium bowl.
  5. Add the avocado, mayonnaise, mustard, lemon juice, salt, and pepper to the bowl. Mash with a fork until blended.
  6. Spoon the avocado mixture into the egg whites. Sprinkle with paprika.
  7. Serve immediately or store in the refrigerator for up to 1 day.
