Ingredients
6 eggs
1/2 ripe avocado
2 tablespoons mayonnaise
1 teaspoon Dijon mustard
1 tablespoon fresh lemon juice

Directions
Bring a large pot of water to a boil.
Gently lower the eggs into the boiling water. Reduce the heat to medium-low and simmer for 12 minutes.
Drain the eggs and run cold water over them for 1 minute. Let cool.
Peel the eggs and slice them in half lengthwise. Remove the egg yolks and add them to a medium bowl.
Add the avocado, mayonnaise, mustard, lemon juice, salt, and pepper to the bowl. Mash with a fork until blended.
Spoon the avocado mixture into the egg whites. Sprinkle with paprika.
Serve immediately or store in the refrigerator for up to 1 day.
