Ingredients
- 1 pound chicken breasts
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 stalks celery, diced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 8 cups chicken broth
Directions
- In a large pot, heat oil over medium-high heat. Add chicken breasts and cook until browned on both sides, about 5 minutes.
- Add onion, garlic, carrots, celery, salt, and pepper to the pot and cook, stirring occasionally, until vegetables are softened, about 5 minutes.
- Add chicken broth and bring to a boil. Reduce heat and simmer, uncovered, for 15 minutes.
- Remove from heat and let cool for 10 minutes. Strain the broth into a large bowl, discarding solids.
