Ingredients

  • 1 pound chicken breasts
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 8 cups chicken broth

Directions

  1. In a large pot, heat oil over medium-high heat. Add chicken breasts and cook until browned on both sides, about 5 minutes.
  2. Add onion, garlic, carrots, celery, salt, and pepper to the pot and cook, stirring occasionally, until vegetables are softened, about 5 minutes.
  3. Add chicken broth and bring to a boil. Reduce heat and simmer, uncovered, for 15 minutes.
  4. Remove from heat and let cool for 10 minutes. Strain the broth into a large bowl, discarding solids.
