Ingredients

  • 2 cups rolled oats
  • 1/2 cup whole wheat flour
  • 1/4 cup honey
  • 1/4 cup melted coconut oil
  • 1/4 cup chopped walnuts
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/2 cup raisins

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet.
  2. In a medium bowl, stir together the oats, flour, baking powder, cinnamon, and salt.
  3. In a separate bowl, mix together the honey, oil, and vanilla. Stir the wet ingredients into the oat mixture until well blended.
  4. Stir in the walnuts and raisins.
  5. Drop cookie dough by teaspoonfuls onto the prepared baking sheet.
  6. Bake for 12 to 15 minutes in the preheated oven, or until golden brown.
  7. Cool for a few minutes before serving.
