Ingredients
1 tablespoon olive oil
1 onion, diced
1 tablespoon minced garlic
1 teaspoon freshly grated ginger
1 teaspoon ground turmeric
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cardamom
1/4 teaspoon ground nutmeg
1/4 teaspoon ground allspice
1/4 teaspoon ground cloves
1/2 teaspoon black pepper
1/2 teaspoon sea salt
1 cup vegetable broth
3 tart apples, peeled, cored and diced
2 tablespoons freshly squeezed lemon juice
1/4 cup raisins
1 cup cooked seitan, diced
Directions
Heat the olive oil in a large skillet over medium-high heat. Add the onion and garlic and cook, stirring often, for 3 minutes.
Add the ginger, turmeric, cumin, coriander, cinnamon, cardamom, nutmeg, allspice, cloves, black pepper, and salt and cook, stirring, for 1 minute.
Add the vegetable broth, apples, lemon juice and raisins and bring to a boil.
Reduce the heat to low and simmer, stirring occasionally, for 20 minutes.
Add the seitan and simmer for an additional 10 minutes.
Serve over steamed basmati rice.

Khoresh is a Persian stew that is usually served with rice.
Seitan is a plant-based food made from wheat gluten.
Tart apples are best for this dish, as they will not become too mushy.
