Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 1 tablespoon minced garlic
- 1 teaspoon freshly grated ginger
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
- 1/4 teaspoon ground cloves
- 1/2 teaspoon black pepper
- 1/2 teaspoon sea salt
- 1 cup vegetable broth
- 3 tart apples, peeled, cored and diced
- 2 tablespoons freshly squeezed lemon juice
- 1/4 cup raisins
- 1 cup cooked seitan, diced
Directions
- Heat the olive oil in a large skillet over medium-high heat. Add the onion and garlic and cook, stirring often, for 3 minutes.
- Add the ginger, turmeric, cumin, coriander, cinnamon, cardamom, nutmeg, allspice, cloves, black pepper, and salt and cook, stirring, for 1 minute.
- Add the vegetable broth, apples, lemon juice and raisins and bring to a boil.
- Reduce the heat to low and simmer, stirring occasionally, for 20 minutes.
- Add the seitan and simmer for an additional 10 minutes.
- Serve over steamed basmati rice.
