Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 tablespoon minced garlic
  • 1 teaspoon freshly grated ginger
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon sea salt
  • 1 cup vegetable broth
  • 3 tart apples, peeled, cored and diced
  • 2 tablespoons freshly squeezed lemon juice
  • 1/4 cup raisins
  • 1 cup cooked seitan, diced

Directions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the onion and garlic and cook, stirring often, for 3 minutes.
  2. Add the ginger, turmeric, cumin, coriander, cinnamon, cardamom, nutmeg, allspice, cloves, black pepper, and salt and cook, stirring, for 1 minute.
  3. Add the vegetable broth, apples, lemon juice and raisins and bring to a boil.
  4. Reduce the heat to low and simmer, stirring occasionally, for 20 minutes.
  5. Add the seitan and simmer for an additional 10 minutes.
  6. Serve over steamed basmati rice.
