Ingredients
- 2 tablespoons olive oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 1 pound lean ground beef
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 4 cups beef broth
- 1 (14.5 ounce) can diced tomatoes
- 1 (15 ounce) can tomato sauce
- 1 (14.5 ounce) can corn, drained
- 1 (14.5 ounce) can green beans, drained
- 1 cup uncooked macaroni
Directions
- Set the Instant Pot to sauté mode and add the olive oil.
- Add the onion and garlic and sauté for 3 minutes.
- Add the ground beef and cook until it’s no longer pink.
- Drain any excess fat and add the oregano, basil, salt and pepper.
- Add the beef broth, diced tomatoes, tomato sauce, corn, green beans and macaroni.
- Stir to combine.
- Secure the lid and set the Instant Pot to Manual/Pressure Cook for 5 minutes.
- When the timer beeps, do a quick release and carefully remove the lid.
- Stir the soup and adjust the seasonings to taste.
- Serve the soup hot with your favorite toppings.
