Ingredients

  • 1 slice stale bread
  • 4 cups chicken or vegetable broth
  • 1 ounce dark chocolate, chopped
  • Salt to taste

Directions

  1. Heat a dry skillet over medium heat and toast the dried chilies until fragrant, about 2-3 minutes per side. Remove the stems and seeds.
  2. In the same skillet, toast the almonds, pumpkin seeds, and sesame seeds until golden brown. Remove from heat.
  3. In a large saucepan, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened.
  4. Add the toasted chilies, almonds, pumpkin seeds, sesame seeds, cinnamon, cumin, oregano, cloves, coriander, nutmeg, raisins, cocoa powder, and stale bread to the saucepan. Stir well to combine.
  5. Pour in the chicken or vegetable broth and bring the mixture to a boil. Reduce heat to low, cover, and simmer for 1 hour, stirring occasionally.
  6. Using an immersion blender or a regular blender, purée the mixture until smooth.
  7. Return the sauce to the saucepan and heat over low heat.
  8. Add the chopped dark chocolate and stir until melted and well incorporated.
  9. Season with salt to taste.
  10. Simmer the sauce for an additional 30 minutes, stirring occasionally.
