Ingredients

  • 2 cups long-grain rice
  • 1/4 cup vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups chicken or vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh cilantro, chopped (optional)

Directions

  1. In a large skillet or Dutch oven, heat the vegetable oil over medium heat.
  2. Add the chopped onion and minced garlic to the skillet. Cook for 2-3 minutes, until the onion is translucent and the garlic is fragrant.
  3. Add the rice to the skillet and stir it constantly for about 5 minutes, until it turns golden brown.
  4. Stir in the diced tomatoes, chicken or vegetable broth, cumin, paprika, salt, and black pepper. Bring the mixture to a boil.
  5. Reduce the heat to low, cover the skillet, and let the rice simmer for 20 minutes, or until the liquid is absorbed and the rice is tender.
  6. Remove the skillet from heat and let it sit, covered, for an additional 5 minutes.
