Ingredients

  • 1 pound dried pinto beans
  • 8 slices bacon, chopped
  • 1 pound Mexican chorizo, casings removed
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 jalapeno peppers, seeded and diced
  • 1 green bell pepper, diced
  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped fresh cilantro, for garnish

Directions

  1. Rinse the pinto beans under cold water, then place them in a large pot and cover with water. Bring to a boil over high heat, then reduce the heat to low and let simmer for 1 hour. Drain and set aside.
  2. In a separate large pot or Dutch oven, cook the bacon over medium heat until crispy. Remove the bacon from the pot, leaving the rendered fat.
  3. Add the chorizo to the pot with the bacon fat and cook until browned, breaking it up with a spoon.
  4. Add the diced onion, minced garlic, jalapeno peppers, and diced bell pepper to the pot. Cook until the vegetables are softened, about 5 minutes.
  5. Stir in the diced tomatoes, cooked pinto beans, chicken broth, ground cumin, dried oregano, salt, and black pepper. Bring to a boil.
  6. Reduce the heat to low and let the beans simmer, partially covered, for about 1 hour, stirring occasionally.
  7. Taste and adjust the seasoning with salt and pepper if needed.
