Ingredients

  • 1 cup red lentils
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric
  • 1 teaspoon chili powder
  • 1 teaspoon garam masala
  • 2 tomatoes, chopped
  • 2 cups water
  • Salt to taste
  • Fresh cilantro, for garnish

Directions

  1. Rinse the red lentils under cold water until the water runs clear.
  2. Heat the vegetable oil in a large pot over medium heat.
  3. Add the mustard seeds and cumin seeds and cook until they start to splutter.
  4. Add the chopped onion and cook until it becomes translucent.
  5. Add the minced garlic and grated ginger. Cook for another minute.
  6. Add the turmeric, chili powder, and garam masala. Stir well to coat the onions with the spices.
  7. Add the chopped tomatoes and cook until they soften.
  8. Add the rinsed red lentils and water. Bring to a boil.
  9. Reduce the heat to low, cover the pot, and simmer for 30-40 minutes or until the lentils are cooked and tender.
  10. Season with salt to taste.
  11. Garnish with fresh cilantro.
  12. Serve hot with rice or naan bread.
