Ingredients

  • 1 cup quinoa
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup vegetable broth
  • 1 can (15 ounces) diced tomatoes
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (4 ounces) diced green chilies, drained

Directions

  1. Rinse the quinoa under cold water for a few seconds and drain well.
  2. Turn on the Instant Pot and select the sauté function. Heat the olive oil and sauté the onion until it becomes translucent.
  3. Add the garlic, chili powder, cumin, paprika, oregano, salt, and pepper to the pot. Stir well to coat the onion with the spices.
  4. Stir in the rinsed quinoa, vegetable broth, diced tomatoes, black beans, and diced green chilies.
  5. Close the Instant Pot lid and set the pressure release valve to the sealing position.
  6. Select the manual/pressure cook function and set the cooking time to 1 minute at high pressure.
  7. Once the cooking time is up, carefully quick release the pressure.
  8. Remove the lid and fluff the quinoa with a fork.
  9. Serve the quinoa taco meat substitute in tacos, burritos, salads, or any other dishes you prefer.
