Ingredients
- 1 cup quinoa
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon chili powder

- 1 teaspoon paprika
- 1/2 teaspoon oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup vegetable broth
- 1 can (15 ounces) diced tomatoes
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (4 ounces) diced green chilies, drained
Directions
- Rinse the quinoa under cold water for a few seconds and drain well.
- Turn on the Instant Pot and select the sauté function. Heat the olive oil and sauté the onion until it becomes translucent.
- Add the garlic, chili powder, cumin, paprika, oregano, salt, and pepper to the pot. Stir well to coat the onion with the spices.
- Stir in the rinsed quinoa, vegetable broth, diced tomatoes, black beans, and diced green chilies.
