Ingredients
- For the kofte:
- 1 lb ground beef
- 1 small onion, grated
- 2 cloves garlic, minced
- 1/4 cup breadcrumbs
- 1/4 cup chopped parsley
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- Salt and pepper to taste
- For the stew:
- 1 lb Moroccan sausage or merguez, cut into chunks
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can diced tomatoes
- 2 cups beef or vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon ground paprika
- 1 teaspoon ground turmeric
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- Salt and pepper to taste
- 1 cup cooked chickpeas
- Fresh parsley, chopped (for garnish)
Directions
- In a large bowl, combine the ground beef, grated onion, minced garlic, breadcrumbs, chopped parsley, ground cumin, ground coriander, ground cinnamon, salt, and pepper. Mix well until all ingredients are evenly incorporated.
- Shape the mixture into small meatballs, about the size of a golf ball. Set aside.
- In a large pot or Dutch oven, heat some olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent and the garlic is fragrant.
- Add the Moroccan sausage or merguez to the pot and cook until browned on all sides.
- Stir in the diced tomatoes, beef or vegetable broth, ground cumin, ground paprika, ground turmeric, ground cinnamon, ground ginger, salt, and pepper. Bring the mixture to a boil.
- Reduce the heat to low and add the cooked chickpeas and the prepared kofte meatballs to the pot. Simmer for 30 minutes, or until the kofte are cooked through and the flavors have melded together.
- Serve the Moroccan Kofte and Sausage Stew hot, garnished with chopped fresh parsley. Enjoy with couscous or crusty bread.
