Ingredients
- 1 cup bulgur wheat
- 1 1/2 cups boiling water
- 2 cups fresh parsley, finely chopped
- 1 cup fresh mint, finely chopped
- 2 medium tomatoes, diced
- 1/2 cup green onions, thinly sliced
- 1/4 cup fresh lemon juice
- 1/4 cup extra-virgin olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
Directions
- Place bulgur wheat in a large bowl. Pour boiling water over the wheat and let it sit for about 15 minutes, or until the water is fully absorbed.
- Fluff the bulgur wheat with a fork and let it cool.
- In the meantime, prepare the dressing by combining lemon juice, olive oil, salt, black pepper, and cayenne pepper (if using) in a small bowl. Whisk until well combined.
- Once the bulgur wheat is cooled, add parsley, mint, tomatoes, and green onions to the bowl. Mix well.
