Ingredients

  • 1 cup bulgur wheat
  • 1 1/2 cups boiling water
  • 2 cups fresh parsley, finely chopped
  • 1 cup fresh mint, finely chopped
  • 2 medium tomatoes, diced
  • 1/2 cup green onions, thinly sliced
  • 1/4 cup fresh lemon juice
  • 1/4 cup extra-virgin olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)

Directions

  1. Place bulgur wheat in a large bowl. Pour boiling water over the wheat and let it sit for about 15 minutes, or until the water is fully absorbed.
  2. Fluff the bulgur wheat with a fork and let it cool.
  3. In the meantime, prepare the dressing by combining lemon juice, olive oil, salt, black pepper, and cayenne pepper (if using) in a small bowl. Whisk until well combined.
  4. Once the bulgur wheat is cooled, add parsley, mint, tomatoes, and green onions to the bowl. Mix well.
  5. Pour the dressing over the salad and toss to combine. Make sure all ingredients are well coated.
  6. Let the tabbouleh sit for at least 10 minutes to allow the flavors to meld together.
