Ingredients

  • 2 cups chickpeas (garbanzo beans), soaked overnight
  • 1/2 medium onion, roughly chopped
  • 1/4 cup fresh parsley, roughly chopped
  • 1/4 cup fresh cilantro, roughly chopped
  • 2 cloves garlic
  • 1 teaspoon cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • Oil for frying

Directions

  1. Drain the soaked chickpeas and pat dry with a clean kitchen towel.
  2. In a food processor, combine the chickpeas, onion, parsley, cilantro, garlic, cumin, coriander, baking powder, cayenne pepper, salt, and pepper.
  3. Process the mixture until it reaches a coarse, crumbly texture.
  4. Transfer the mixture to a bowl and refrigerate for 30 minutes to firm up.
  5. Heat oil in a deep pan or fryer to 375°F (190°C).
  6. Use a small ice cream scoop or a tablespoon to form the falafel mixture into small balls.
  7. Gently drop the falafel balls into the hot oil and fry until golden brown and crispy, about 4-6 minutes.
  8. Use a slotted spoon to remove the falafel from the oil and drain on paper towels.
