Ingredients

  • 10 organic lemons
  • 1 liter vodka
  • 2 cups water

Directions

  1. Wash the lemons thoroughly to remove any dirt and wax. Pat them dry.
  2. Using a vegetable peeler or a knife, remove the yellow zest from the lemons, making sure to avoid the white pith as it can make the Limoncello bitter.
  3. Place the lemon zest in a clean glass jar and pour the vodka over it. Close the jar tightly and let it steep for at least 7 days in a cool, dark place. Shake the jar gently every day to release the oils from the lemon zest.
  4. After 7 days, prepare the simple syrup by combining the water and sugar in a saucepan. Bring the mixture to a boil over medium heat, stirring constantly until the sugar dissolves completely. Remove from heat and let the syrup cool down to room temperature.
  5. Once the syrup has cooled, strain the infused vodka to remove the lemon zest. Discard the zest.
  6. Add the simple syrup to the infused vodka and stir well to combine. Taste and adjust the sweetness if desired.
  7. Transfer the Limoncello to bottles or jars with tight-fitting lids. Store in the refrigerator for at least 2 weeks before serving to allow the flavors to develop.
  8. Serve chilled in small liqueur glasses or use as a mixer in cocktails.
