This Octoberfest German Potato Salad is a classic German dish made with potatoes, bacon, onions, and a tangy vinegar dressing. It's the perfect side dish for your Octoberfest celebrations or any backyard barbecue.

Ingredients

  • 2 pounds red potatoes, diced
  • 1/2 pound bacon, chopped
  • 1 small onion, diced
  • 1/2 cup apple cider vinegar
  • 1/4 cup sugar
  • 1/4 cup vegetable oil
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley

Directions

  1. In a large pot, boil the diced potatoes until tender. Drain and set aside.
  2. In a large skillet, cook the bacon until crispy. Remove the bacon from the skillet and set aside, leaving the bacon drippings in the pan.
  3. Add the diced onion to the skillet and cook until translucent.
  4. In a small bowl, whisk together the vinegar, sugar, and vegetable oil. Pour the dressing over the warm potatoes and toss to coat.
  5. Add the bacon, onions, and parsley to the potato mixture. Season with salt and pepper to taste.
  6. Serve warm or at room temperature. Enjoy your Octoberfest German Potato Salad!
