Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • 2 teaspoons ground cumin
  • 2 teaspoons ground paprika
  • 2 teaspoons ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon chili powder
  • 1 teaspoon garam masala
  • 1 teaspoon salt
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 can (14 oz) tomato sauce
  • 1 cup heavy cream
  • 1/4 cup chopped fresh cilantro leaves
  • Naan bread and basmati rice, for serving

Directions

  1. In a bowl, combine the yogurt, lemon juice, cumin, paprika, coriander, turmeric, chili powder, garam masala, and salt. Mix well.
  2. Cut the chicken thighs into bite-sized pieces and add them to the yogurt marinade. Stir until all the chicken pieces are coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
  3. Preheat your grill to medium-high heat. Thread the marinated chicken onto skewers and grill for 10-12 minutes, turning occasionally, until the chicken is cooked through and slightly charred. Remove from the grill and set aside.
  4. In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and sauté until soft and golden brown, about 5 minutes. Stir in the minced garlic and grated ginger, and cook for an additional minute.
  5. Pour in the tomato sauce and stir well. Bring the sauce to a simmer and let it cook for 5 minutes, allowing the flavors to meld together.
  6. Stir in the heavy cream and simmer for another 2-3 minutes until the sauce is thickened slightly. Add the grilled chicken pieces to the sauce and toss to coat.
  7. Garnish with chopped cilantro leaves and serve the chicken tikka masala hot with naan bread and basmati rice.
  8. Enjoy the flavors of India in every bite!
