Directions

  1. Cook the bacon in a large skillet over medium heat until crispy. Remove the bacon and set aside, leaving the bacon grease in the skillet.
  2. In the same skillet, sauté the onion, bell pepper, and garlic until softened.

  4. Stir in the diced tomatoes, chicken broth, smoked paprika, cayenne pepper, salt, black pepper, thyme, and oregano.
  5. Bring the mixture to a boil, then reduce heat to low, cover the skillet, and simmer for 20-25 minutes or until the rice is cooked and the liquid is absorbed.
  6. Remove the skillet from heat and let it sit, covered, for 5 minutes.
