Ingredients
- 1 ½ cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- 2 tablespoons sugar
- 2 eggs
- 1 ½ cups milk
- 2 tablespoons melted butter
- 2 cups of fresh fruits of your choice (like strawberries, blueberries, bananas, etc.)
Directions
- In a large bowl, mix together the flour, baking powder, salt, and sugar.
- In a separate bowl, beat the eggs until light and fluffy. Slowly add in the milk and melted butter and mix until combined.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Heat a large skillet over medium heat. Grease the skillet well with butter or cooking spray.
- Pour ¼ cup of the batter into the skillet and spread it out to form a thin, round pancake.
- Sprinkle the fresh fruit over the top of the pancake. Cook for 2-3 minutes, or until the edges are lightly golden brown.
- Carefully flip the pancake and cook for an additional 2-3 minutes, or until the other side is golden brown.
- Serve hot with butter and syrup.
