Ingredients

  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 2 tablespoons sugar
  • 2 eggs
  • 1 ½ cups milk
  • 2 tablespoons melted butter
  • 2 cups of fresh fruits of your choice (like strawberries, blueberries, bananas, etc.)

Directions

  1. In a large bowl, mix together the flour, baking powder, salt, and sugar.
  2. In a separate bowl, beat the eggs until light and fluffy. Slowly add in the milk and melted butter and mix until combined.
  3. Add the wet ingredients to the dry ingredients and mix until just combined.
  4. Heat a large skillet over medium heat. Grease the skillet well with butter or cooking spray.
  5. Pour ¼ cup of the batter into the skillet and spread it out to form a thin, round pancake.
  6. Sprinkle the fresh fruit over the top of the pancake. Cook for 2-3 minutes, or until the edges are lightly golden brown.
  7. Carefully flip the pancake and cook for an additional 2-3 minutes, or until the other side is golden brown.
  8. Serve hot with butter and syrup.
