- 2 large eggplants
- 1 pound ground beef
- 1 onion, finely chopped

- 1 cup breadcrumbs

- 2 cups marinara sauce
- 1 cup shredded mozzarella cheese
Directions
- Preheat the oven to 375°F (190°C).
- Cut the eggplants in half lengthwise and scoop out the flesh, leaving a 1/2-inch thick shell. Chop the flesh and set aside.
- Heat a large skillet over medium heat and cook the ground beef until browned. Remove the beef from the skillet and set aside.
- In the same skillet, add the chopped onion, garlic, bell peppers, carrot, and celery. Cook until the vegetables are tender.
