- 1 pound ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (15 ounces) black beans, rinsed and drained
- 1 can (15 ounces) corn, drained
- 1 can (15 ounces) diced tomatoes, undrained
- 1 cup salsa
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 12 corn tortillas
- 2 cups shredded cheddar cheese
- 1/4 cup fresh cilantro, chopped (optional)
Directions
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook the ground beef, onion, and garlic over medium heat until the beef is browned and cooked through. Drain any excess fat.
- Add the black beans, corn, diced tomatoes, salsa, chili powder, cumin, salt, and black pepper to the skillet. Stir well to combine. Cook for an additional 5 minutes, until heated through.
