Ingredients

  • 1 pound ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (15 ounces) corn, drained
  • 1 can (15 ounces) diced tomatoes, undrained
  • 1 cup salsa
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 corn tortillas
  • 2 cups shredded cheddar cheese
  • 1/4 cup fresh cilantro, chopped (optional)

Directions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, cook the ground beef, onion, and garlic over medium heat until the beef is browned and cooked through. Drain any excess fat.
  3. Add the black beans, corn, diced tomatoes, salsa, chili powder, cumin, salt, and black pepper to the skillet. Stir well to combine. Cook for an additional 5 minutes, until heated through.
  4. In a 9x13-inch baking dish, spread a thin layer of the beef mixture on the bottom. Top with 4 corn tortillas, overlapping them slightly to cover the bottom of the dish.
  5. Spread half of the remaining beef mixture over the tortillas, followed by 1/2 cup of shredded cheddar cheese. Repeat the layers with 4 tortillas, the remaining beef mixture, and 1/2 cup of shredded cheddar cheese.
  6. Place the remaining 4 tortillas on top of the casserole. Sprinkle with the remaining 1 cup of shredded cheddar cheese.
  7. Cover the dish with foil and bake for 20 minutes. Then, remove the foil and bake for an additional 10 minutes, until the cheese is melted and bubbly.
  8. Garnish with chopped fresh cilantro, if desired.
  9. Allow the casserole to cool for a few minutes before serving.
  10. Serve hot with guacamole, sour cream, and a fresh green salad.
