Ingredients

  • 1 cup Israeli Couscous
  • 1/2 cup dried apricots, chopped
  • 1/2 cup dried cranberries
  • 1/2 cup vegetable or chicken broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste
    • Directions

      1. In a medium saucepan, heat the olive oil over medium heat.
      2. Add the couscous and toast until lightly golden brown, about 3 minutes.
      3. Add the broth and bring to a boil.
