Ingredients

  • 1/2 head green cabbage, shredded
  • 1/2 head red cabbage, shredded
  • 1/2 red onion, thinly sliced
  • 1/4 cup cilantro, chopped
  • 1/4 cup mint, chopped
  • 1/4 cup peanuts, chopped
  • 1/4 cup olive oil
  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon honey
  • 1 teaspoon garlic, minced
  • 1/2 teaspoon ginger, grated
  • 1/2 teaspoon red pepper flakes
  • 1/4 teaspoon salt

Directions

  1. In a large bowl, combine the shredded cabbage, red onion, cilantro, and mint. Set aside.
  2. In a medium bowl, whisk together the olive oil, rice vinegar, soy sauce, sesame oil, honey, garlic, ginger, red pepper flakes, and salt.
  3. Pour the dressing over the cabbage mixture, and toss to combine.
  4. Sprinkle the chopped peanuts over the salad and serve.
