Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups quinoa
  • 1 bell pepper, diced
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • 2 cups vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cumin
  • 1/2 teaspoon oregano
  • 1/2 teaspoon thyme
  • 2 cups diced cooked chicken
  • 1/2 cup frozen peas
  • 1/2 cup sliced olives
  • 1/4 cup freshly chopped parsley

Directions

  1. Heat the oil in a large skillet over medium heat.
  2. Add the onion and garlic and cook for 3-4 minutes, stirring occasionally.
  3. Add the quinoa, bell pepper, paprika, turmeric, vegetable broth, salt, pepper, cumin, oregano, and thyme. Bring to a boil.
  4. Reduce the heat to low and simmer for 15-20 minutes, or until the quinoa is cooked.
  5. Stir in the chicken, peas, olives, and parsley. Cook for an additional 5 minutes.
  6. Serve hot.
