Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups quinoa
- 1 bell pepper, diced
- 1 teaspoon paprika
- 1 teaspoon turmeric
- 2 cups vegetable broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cumin
- 1/2 teaspoon oregano
- 1/2 teaspoon thyme
- 2 cups diced cooked chicken
- 1/2 cup frozen peas
- 1/2 cup sliced olives
- 1/4 cup freshly chopped parsley
Directions
- Heat the oil in a large skillet over medium heat.
- Add the onion and garlic and cook for 3-4 minutes, stirring occasionally.
- Add the quinoa, bell pepper, paprika, turmeric, vegetable broth, salt, pepper, cumin, oregano, and thyme. Bring to a boil.
- Reduce the heat to low and simmer for 15-20 minutes, or until the quinoa is cooked.
- Stir in the chicken, peas, olives, and parsley. Cook for an additional 5 minutes.
- Serve hot.
