Ingredients
1 tablespoon olive oil
1 onion, diced
2 cloves garlic, minced
2 cups quinoa
1 bell pepper, diced

Directions

Add the quinoa, bell pepper, paprika, turmeric, vegetable broth, salt, pepper, cumin, oregano, and thyme. Bring to a boil.
Reduce the heat to low and simmer for 15-20 minutes, or until the quinoa is cooked.
Stir in the chicken, peas, olives, and parsley. Cook for an additional 5 minutes.
Serve hot.
