Ingredients

  • 2 cups rolled oats
  • 1 cup chopped nuts, such as almonds, walnuts, or pecans
  • 1/2 cup shredded coconut
  • 1/2 cup honey
  • 1/2 cup nut butter (such as almond, peanut, or cashew)
  • 1/4 cup oil (canola, coconut, or olive)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup dried fruit (such as raisins, cranberries, or cherries)

Directions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix together oats, nuts, and coconut.
  3. In a separate bowl, whisk together honey, nut butter, oil, vanilla, and cinnamon.
  4. Pour wet ingredients into dry ingredients and stir to combine.
  5. Line an 8x8-inch (20x20 cm) baking pan with parchment paper and spread the granola mixture into the pan.
  6. Bake for 25 minutes, or until golden brown.
  7. Remove from oven and let cool for 10 minutes.
  8. Sprinkle dried fruit over the top and press down lightly.
  9. Let cool for another 15 minutes before cutting into bars.
