Ingredients
- 2 cups rolled oats
- 1 cup chopped nuts, such as almonds, walnuts, or pecans
- 1/2 cup shredded coconut
- 1/2 cup honey
- 1/2 cup nut butter (such as almond, peanut, or cashew)
- 1/4 cup oil (canola, coconut, or olive)
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/2 cup dried fruit (such as raisins, cranberries, or cherries)
Directions
- Preheat oven to 350°F (175°C).
- In a large bowl, mix together oats, nuts, and coconut.
- In a separate bowl, whisk together honey, nut butter, oil, vanilla, and cinnamon.
- Pour wet ingredients into dry ingredients and stir to combine.
- Line an 8x8-inch (20x20 cm) baking pan with parchment paper and spread the granola mixture into the pan.
- Bake for 25 minutes, or until golden brown.
- Remove from oven and let cool for 10 minutes.
- Sprinkle dried fruit over the top and press down lightly.
- Let cool for another 15 minutes before cutting into bars.
