Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups potatoes, diced
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 6 eggs
  • 1/3 cup milk
  • 1 cup shredded cheese

Directions

  1. Preheat oven to 375°F.
  2. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the potatoes and season with salt and pepper. Cook, stirring occasionally, until the potatoes are golden and tender, about 10 minutes.
  4. In a medium bowl, whisk together the eggs and milk. Pour the egg mixture into the skillet with the potatoes and stir to combine.
  5. Sprinkle the cheese over the top and transfer the skillet to the oven. Bake until the eggs are set and the cheese is melted, 20 to 25 minutes.
  6. Let cool slightly before serving.
