Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups potatoes, diced
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 6 eggs
- 1/3 cup milk
- 1 cup shredded cheese
Directions
- Preheat oven to 375°F.
- In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Add the potatoes and season with salt and pepper. Cook, stirring occasionally, until the potatoes are golden and tender, about 10 minutes.
- In a medium bowl, whisk together the eggs and milk. Pour the egg mixture into the skillet with the potatoes and stir to combine.
- Sprinkle the cheese over the top and transfer the skillet to the oven. Bake until the eggs are set and the cheese is melted, 20 to 25 minutes.
- Let cool slightly before serving.
