Vegan Roasted Cauliflower Soup

Ingredients

  • 1 head of cauliflower, cut into florets
  • 3 cloves of garlic, minced
  • 3 tablespoons of olive oil
  • 1 teaspoon of sea salt
  • 1/2 teaspoon of black pepper
  • 4 cups of vegetable broth
  • 1/2 cup of vegan parmesan cheese (optional)

Directions

  1. Preheat the oven to 375°F.
  2. In a large bowl, toss the cauliflower florets with the garlic, olive oil, sea salt, and black pepper.
  3. Spread the cauliflower onto a baking sheet and roast in the oven for 25-30 minutes, or until the cauliflower is golden brown.
  4. Add the roasted cauliflower to a pot and add the vegetable broth. Cover and bring to a boil.
  5. Reduce the heat and simmer for 10-15 minutes, or until the cauliflower is tender.
  6. Using an immersion blender, blend the soup until it is creamy and smooth.
  7. Serve the soup with vegan parmesan cheese, if desired.
