Ingredients

  • 1/2 pound fresh-from-the-vine tortellini
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup white wine
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • 1/4 teaspoon ground black pepper
  • 1/4 cup chopped fresh parsley
  • 1/4 cup grated Parmesan cheese

Directions

  1. Bring a large pot of salted water to a boil.
  2. Add the tortellini and cook according to package instructions.
  3. Drain the cooked tortellini and set aside.
  4. Heat the olive oil in a large skillet over medium heat.
  5. Add the onion and garlic and cook until the onion is softened, about 5 minutes.
  6. Add the white wine and simmer for 2 minutes.
  7. Add the oregano, red pepper flakes, and black pepper and stir to combine.
  8. Add the cooked tortellini, parsley, and Parmesan cheese and stir to combine.
  9. Cook for an additional 2 minutes, stirring occasionally.
  10. Serve warm.
