Ingredients

  • 1 lb ground turkey
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 (14.5 oz) can diced tomatoes
  • 1 (12 oz) can tomato sauce
  • 1 (15 oz) can pumpkin puree
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 1 teaspoon ground black pepper

Directions

  1. In a large skillet over medium-high heat, brown the ground turkey until cooked through, about 8 minutes. Add the onion, garlic and bell pepper and cook for an additional 5 minutes.
  2. Transfer the cooked turkey mixture to the slow cooker and add the black beans, kidney beans, corn, diced tomatoes, tomato sauce, pumpkin puree, chili powder, cumin, garlic powder, onion powder, oregano, salt and pepper. Stir to combine.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  4. Serve with desired toppings and enjoy!
