Ingredients
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 tablespoon fresh oregano, chopped
- 2 tablespoons fresh rosemary, chopped
- 1 teaspoon ground black pepper
- 1 teaspoon salt
- 8 lamb loin chops
- 2 tablespoons fresh lemon juice
- 1/2 cup crumbled feta cheese
- 2 cups fresh green salad
Directions
- In a small bowl, mix together the olive oil, garlic, oregano, rosemary, pepper, and salt.
- Place the lamb chops in a shallow dish and pour the marinade over them, turning to coat. Cover and refrigerate for at least 1 hour or up to overnight.
- Preheat an outdoor grill or indoor grill pan over medium-high heat.
- Remove the lamb chops from the marinade and discard any remaining marinade. Grill the chops for 3-4 minutes per side, or until cooked to desired doneness.
- Transfer the chops to plates and squeeze fresh lemon juice over the top.
- Top with feta cheese and serve with green salad.
