Polenta with Spicy Sausage & Veggie Sauce

Ingredients

  • 1 cup polenta
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 teaspoon garlic, minced
  • 1/2 pound Italian sausage, chopped
  • 1/2 cup white wine
  • 2 cups tomato sauce
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper, to taste
  • 1/4 cup Parmesan cheese, grated

Directions

  1. Bring 4 cups of water to a boil in a medium saucepan. Slowly add in the polenta, stirring continuously to avoid lumps. Reduce the heat to low and cook for 10-15 minutes until the polenta is thick and creamy. Remove from heat and set aside.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the onion, bell pepper and garlic and cook for 5 minutes until the vegetables are softened. Add the sausage and cook for an additional 5 minutes, stirring occasionally.
  3. Add the white wine and reduce the heat to medium-low. Simmer for 5 minutes until the wine has reduced. Add the tomato sauce, red pepper flakes, parsley and season with salt and pepper. Simmer for 10 minutes, stirring occasionally.
  4. To assemble, spoon the polenta onto a serving plate. Top with the sausage and veggie sauce and sprinkle with Parmesan cheese. Serve immediately.
