Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup butter, softened
- 1 cup packed light brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 2 cups peeled, cored and chopped apples
- 1 cup chopped walnuts
- 1/2 cup granulated sugar
- 1/4 cup freshly squeezed lemon juice
Directions
- Preheat oven to 350 degrees F. Grease and flour a 9x13-inch baking pan.
- In a medium bowl, combine the flour, baking soda, baking powder, cinnamon, nutmeg and salt; set aside.
- In a large bowl, cream together the butter and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Alternately add the flour mixture and buttermilk to the creamed mixture, stirring just until incorporated. Fold in the apples and walnuts.
- Pour the batter into the prepared pan and bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- In a small saucepan, stir together the granulated sugar and lemon juice. Bring to a boil over medium heat and boil for 1 minute. Remove from heat and set aside.
- When the cake is done, remove from oven and pour glaze over top. Let cool for 15 minutes before serving.
