Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 1 cup packed light brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 2 cups peeled, cored and chopped apples
  • 1 cup chopped walnuts
  • 1/2 cup granulated sugar
  • 1/4 cup freshly squeezed lemon juice

Directions

  1. Preheat oven to 350 degrees F. Grease and flour a 9x13-inch baking pan.
  2. In a medium bowl, combine the flour, baking soda, baking powder, cinnamon, nutmeg and salt; set aside.
  3. In a large bowl, cream together the butter and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Alternately add the flour mixture and buttermilk to the creamed mixture, stirring just until incorporated. Fold in the apples and walnuts.
  4. Pour the batter into the prepared pan and bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  5. In a small saucepan, stir together the granulated sugar and lemon juice. Bring to a boil over medium heat and boil for 1 minute. Remove from heat and set aside.
  6. When the cake is done, remove from oven and pour glaze over top. Let cool for 15 minutes before serving.
