Ingredients
- 1 cup lentils, cooked
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 large apples, peeled, cored and diced
- 2 teaspoons curry powder
- Salt and pepper, to taste
- 1 tablespoon lemon juice
Directions
- Heat the olive oil in a large pot over medium-high heat.
- Add the onion and garlic and cook for 2 minutes, or until the onion is softened.
- Stir in the vegetable broth, lentils, apples, curry powder, salt and pepper.
- Bring to a boil, reduce heat to low and simmer for 30 minutes, stirring occasionally.
- Stir in the lemon juice.
- Serve warm.
