Ingredients

  • 1 cup lentils, cooked
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 large apples, peeled, cored and diced
  • 2 teaspoons curry powder
  • Salt and pepper, to taste
  • 1 tablespoon lemon juice

Directions

  1. Heat the olive oil in a large pot over medium-high heat.
  2. Add the onion and garlic and cook for 2 minutes, or until the onion is softened.
  3. Stir in the vegetable broth, lentils, apples, curry powder, salt and pepper.
  4. Bring to a boil, reduce heat to low and simmer for 30 minutes, stirring occasionally.
  5. Stir in the lemon juice.
  6. Serve warm.
