Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/4 cup light corn syrup

Directions

  1. Preheat oven to 350°F (180°C). Grease two baking sheets.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  3. In a separate bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla.
  4. Mix in the corn syrup until well blended. Gradually add the dry ingredients to the wet ingredients and mix until everything is fully incorporated.
  5. Roll the dough out to 1/4 inch (6 mm) thickness on a lightly floured surface. Cut the dough into animal shapes with cookie cutters, and place the crackers on the prepared baking sheets.
  6. Bake for 8-10 minutes, or until lightly golden. Allow the crackers to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
