Ingredients

  • 1/2 lb bacon, diced
  • 2 tablespoons butter
  • 1 onion, diced
  • 1/4 cup all-purpose flour
  • 1 cup beer
  • 2 cups chicken broth
  • 1 teaspoon dried mustard
  • 2 cups shredded sharp cheddar cheese
  • Salt and pepper to taste

Directions

  1. In a large pot over medium-high heat, cook the bacon until crisp.
  2. Remove the bacon from the pot and set aside.
  3. Add the butter to the pot and melt.
  4. Add the onion and sauté until softened, about 5 minutes.
  5. Stir in the flour and cook for 1 minute.
