Ingredients
- 1 tablespoon of olive oil
- 1/4 cup diced onion
- 1/4 cup diced bell pepper
- 1/2 teaspoon of ground cumin
- 1/4 teaspoon of turmeric
- 1/4 teaspoon of paprika
- 1/4 teaspoon of garlic powder
- 1/4 teaspoon of sea salt
- 1/4 teaspoon of black pepper
- 1 (14-ounce) package of extra-firm tofu, drained and crumbled
- 1/4 cup of nutritional yeast
- 1/4 cup diced tomato
- 1/4 cup chopped fresh spinach
Directions
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and bell pepper and sauté for 5 minutes, until softened.
- Add the cumin, turmeric, paprika, garlic powder, sea salt, and black pepper and sauté for 1 minute.
- Add the crumbled tofu, nutritional yeast, tomato, and spinach and stir to combine.
- Cook for 8-10 minutes, stirring occasionally, until the tofu is heated through and the vegetables are softened.
- Serve hot with your favorite toppings.
