Ingredients

  • 1 tablespoon of olive oil
  • 1/4 cup diced onion
  • 1/4 cup diced bell pepper
  • 1/2 teaspoon of ground cumin
  • 1/4 teaspoon of turmeric
  • 1/4 teaspoon of paprika
  • 1/4 teaspoon of garlic powder
  • 1/4 teaspoon of sea salt
  • 1/4 teaspoon of black pepper
  • 1 (14-ounce) package of extra-firm tofu, drained and crumbled
  • 1/4 cup of nutritional yeast
  • 1/4 cup diced tomato
  • 1/4 cup chopped fresh spinach

Directions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and bell pepper and sauté for 5 minutes, until softened.
  3. Add the cumin, turmeric, paprika, garlic powder, sea salt, and black pepper and sauté for 1 minute.
  4. Add the crumbled tofu, nutritional yeast, tomato, and spinach and stir to combine.
  5. Cook for 8-10 minutes, stirring occasionally, until the tofu is heated through and the vegetables are softened.
  6. Serve hot with your favorite toppings.
