Ingredients
- 2 large cucumbers, sliced
- 1 teaspoon sea salt
- 2 tablespoons olive oil
- 1/3 cup fresh basil leaves, chopped
- 1 small lemon, juiced
- 1 tablespoon honey
- Salt and pepper to taste
Directions
- In a large bowl, combine the cucumbers and sea salt. Toss gently and set aside for 10 minutes.
- In a small bowl, whisk together the olive oil, lemon juice, honey, salt and pepper.
- Add the basil leaves to the cucumbers and pour the dressing over them. Toss to combine.
- Serve immediately or refrigerate for up to 2 days.
