Ingredients
4 ripe bananas
1/2 cup butter
1/2 cup brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground allspice
1/2 cup dark rum
1/2 cup chopped pecans
1/2 cup raisins
1/4 cup honey
2 tablespoons orange juice
4 large flour tortillas

Directions
In a large skillet, melt the butter over medium heat.
Add the brown sugar, cinnamon, nutmeg, and allspice and stir until combined.
Slice the bananas into 1/4-inch thick slices and add to the skillet.
Cook stirring occasionally, until the bananas are softened and lightly caramelized, about 5 minutes.
Add the rum, pecans, raisins, honey, and orange juice and stir to combine.
Cook for 5 minutes more, stirring occasionally, until the sauce is thick and bubbly.
Remove from heat and let cool for 10 minutes.
Heat a few inches of oil in a large heavy-bottom pot or deep fryer to 350 degrees Fahrenheit.
Lay a flour tortilla flat on a work surface. Place a heaping 1/4 cup of the banana filling in the center of the tortilla.
Fold the sides of the tortilla up over the filling and press to seal.
Carefully place the chimichanga in the hot oil and fry for 2-3 minutes, flipping once, until golden brown and crispy on both sides.
Remove from the oil and let drain on a paper towel-lined plate.
Repeat with the remaining tortillas and filling.
Serve warm, with a scoop of vanilla ice cream.

The origin of the chimichanga is unknown, but it's believed to have originated in Mexico or Arizona.
Bananas Foster is a classic New Orleans dessert made with bananas, brown sugar, butter, and dark rum.
