Ingredients
- 4 ripe bananas
- 1/2 cup butter
- 1/2 cup brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
- 1/2 cup dark rum
- 1/2 cup chopped pecans
- 1/2 cup raisins
- 1/4 cup honey
- 2 tablespoons orange juice
- 4 large flour tortillas
- Cooking oil for frying
- Vanilla ice cream for serving
Directions
- In a large skillet, melt the butter over medium heat.
- Add the brown sugar, cinnamon, nutmeg, and allspice and stir until combined.
- Slice the bananas into 1/4-inch thick slices and add to the skillet.
- Cook stirring occasionally, until the bananas are softened and lightly caramelized, about 5 minutes.
- Add the rum, pecans, raisins, honey, and orange juice and stir to combine.
- Cook for 5 minutes more, stirring occasionally, until the sauce is thick and bubbly.
- Remove from heat and let cool for 10 minutes.
- Heat a few inches of oil in a large heavy-bottom pot or deep fryer to 350 degrees Fahrenheit.
- Lay a flour tortilla flat on a work surface. Place a heaping 1/4 cup of the banana filling in the center of the tortilla.
- Fold the sides of the tortilla up over the filling and press to seal.
- Carefully place the chimichanga in the hot oil and fry for 2-3 minutes, flipping once, until golden brown and crispy on both sides.
- Remove from the oil and let drain on a paper towel-lined plate.
- Repeat with the remaining tortillas and filling.
- Serve warm, with a scoop of vanilla ice cream.
