Ingredients
1 cup of diced onions
2 cloves of garlic, minced
1 large zucchini, diced
1 large eggplant, diced
1 large bell pepper, diced
1 teaspoon of dried oregano

1/2 cup of vegetable broth
2 tablespoons of olive oil

Directions
Heat the olive oil in a large skillet over medium-high heat. Add the onions and garlic and cook until softened, about 3 minutes.
Add the zucchini, eggplant, and bell pepper and cook until softened, about 5 minutes.
Stir in the oregano, basil, and tomato paste and cook until fragrant, about 1 minute.
Add the vegetable broth and bring to a boil. Reduce the heat to a simmer and cook for 15 minutes.
Stir in the parsley and season with salt and pepper to taste.
Meanwhile, bring a large pot of salted water to a boil. Cook the pappardelle according to the package instructions.
Drain the pasta and add to the ratatouille. Toss to combine and serve.
