Ingredients
2 tablespoons vegetable oil
2 cloves garlic, minced
1 onion, chopped
2 teaspoons ground cumin
1 teaspoon ground coriander

Directions
Heat the oil in a large skillet over medium heat. Add the garlic and onion; cook and stir until the onion is tender, about 5 minutes.
Stir in the cumin, coriander, turmeric, and cayenne pepper. Cook and stir for 1 minute.
Add the tomatoes and potatoes; bring to a boil. Reduce heat to low, cover, and simmer for 10 minutes.
Add the cauliflower and cilantro; cover and simmer for 10 minutes, or until the vegetables are tender.
Season with salt to taste.
