Ingredients

  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • 1 (14.5 ounce) can diced tomatoes
  • 2 potatoes, cut into 1/2 inch cubes
  • 1 head cauliflower, cut into florets
  • 1/4 cup chopped fresh cilantro
  • Salt to taste

Directions

  1. Heat the oil in a large skillet over medium heat. Add the garlic and onion; cook and stir until the onion is tender, about 5 minutes.
  2. Stir in the cumin, coriander, turmeric, and cayenne pepper. Cook and stir for 1 minute.
  3. Add the tomatoes and potatoes; bring to a boil. Reduce heat to low, cover, and simmer for 10 minutes.
  4. Add the cauliflower and cilantro; cover and simmer for 10 minutes, or until the vegetables are tender.
  5. Season with salt to taste.
