Ingredients
- 1 pork tenderloin (1-1.5 lbs.)
- 2 tablespoons olive oil
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 1 teaspoon garlic powder

- 2 apples, cored and cut into wedges
- Salt and pepper, to taste
Directions
- Preheat oven to 400 degrees F.
- In a small bowl, mix together the olive oil, rosemary, thyme, garlic powder, and smoked paprika. Rub the mixture all over the pork tenderloin.
- Place the pork in a baking dish and scatter the apple wedges around it.
- Bake for 25-30 minutes, or until the internal temperature reaches 145 degrees F. Let the pork rest for 5 minutes.
- Season with salt and pepper, to taste, and enjoy!
