Ingredients

  • 1 pork tenderloin (1-1.5 lbs.)
  • 2 tablespoons olive oil
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 2 apples, cored and cut into wedges
  • Salt and pepper, to taste

Directions

  1. Preheat oven to 400 degrees F.
  2. In a small bowl, mix together the olive oil, rosemary, thyme, garlic powder, and smoked paprika. Rub the mixture all over the pork tenderloin.
  3. Place the pork in a baking dish and scatter the apple wedges around it.
  4. Bake for 25-30 minutes, or until the internal temperature reaches 145 degrees F. Let the pork rest for 5 minutes.
  5. Season with salt and pepper, to taste, and enjoy!
