Ingredients

  • 1 large spaghetti squash
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 orange bell pepper, chopped
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • ½ teaspoon dried oregano
  • Salt and pepper, to taste
  • ½ cup grated Parmesan cheese

Directions

  1. Preheat the oven to 400°F.
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds. Place the halves cut side up on a baking sheet.
  3. In a large bowl, combine the bell peppers, onion, garlic, olive oil, oregano, salt, and pepper. Mix well to combine, then spread the mixture over the two halves of the spaghetti squash.
  4. Bake for 25-30 minutes, or until the squash is tender and the vegetables are lightly browned.
