Ingredients
- 1 large spaghetti squash
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 orange bell pepper, chopped
- 1 small onion, chopped
- 2 cloves garlic, minced

- ½ cup grated Parmesan cheese
Directions
- Preheat the oven to 400°F.
- Cut the spaghetti squash in half lengthwise and scoop out the seeds. Place the halves cut side up on a baking sheet.
- In a large bowl, combine the bell peppers, onion, garlic, olive oil, oregano, salt, and pepper. Mix well to combine, then spread the mixture over the two halves of the spaghetti squash.
- Bake for 25-30 minutes, or until the squash is tender and the vegetables are lightly browned.
