Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup light brown sugar
  • 1/2 cup white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup shredded coconut
  • 1/2 cup almonds, chopped
  • 1/2 cup dark chocolate chips

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, cream together the butter and sugars until light and fluffy.
  3. Beat in the egg, vanilla extract, and almond extract until well blended.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually stir into the creamed mixture.
  5. Stir in the coconut, almonds, and chocolate chips.
  6. Drop dough by rounded spoonfuls onto ungreased cookie sheets.
  7. Bake for 10 to 12 minutes in the preheated oven, or until lightly browned.
  8. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
