Ingredients

  • 3 cups baby bok choy, chopped
  • 1/2 cup almonds, sliced
  • 1/4 cup olive oil
  • 1 teaspoon sesame oil
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 teaspoon rice vinegar
  • Salt and pepper to taste

Directions

  1. Preheat oven to 350°F.
  2. Spread almonds on a baking sheet and bake for 10 minutes or until lightly golden.
  3. In a small bowl, whisk together olive oil, sesame oil, honey, soy sauce, and rice vinegar.
  4. In a large bowl, combine baby bok choy and almonds. Pour dressing over the bok choy and almonds and toss to combine.
  5. Add salt and pepper to taste.
  6. Serve immediately.
