Ingredients

  • 2 cups cooked wild rice
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 cup mushrooms, chopped
  • 1/2 cup frozen peas
  • 1/2 cup shredded cheese
  • 1/4 cup olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Directions

  1. Preheat oven to 375 degrees. Grease a 9x13 baking dish.
  2. In a large bowl, combine the cooked wild rice, onion, bell pepper, mushrooms, and peas.
  3. In a small bowl, mix together the olive oil, garlic powder, oregano, salt, and pepper.
  4. Pour the olive oil mixture over the wild rice mixture and stir to combine.
  5. Pour the wild rice mixture into the prepared baking dish.
  6. Sprinkle the shredded cheese over the top of the casserole.
  7. Bake for 25-30 minutes, or until the cheese is melted and bubbly.
