Ingredients
2 cups all-purpose flour
1/2 teaspoon salt
2 tablespoons sugar
2 tablespoons vegetable oil
1/2 cup cold water

1/4 teaspoon ground cinnamon

Directions
In a medium bowl, combine the flour, salt, and sugar. Stir in the oil and cold water until the dough forms a ball.
On a lightly floured surface, roll the dough out to 1/8 inch thick.
Cut the dough into 4-inch circles. Wrap the circles around the cannoli tubes and press to seal.
In a deep pot, heat 2 inches of vegetable oil to 375 degrees F.
Fry the cannoli tubes in the hot oil until golden brown, about 2 minutes.
Drain on paper towels and let cool.
In a medium bowl, mix the ricotta cheese, sugar, vanilla extract, cinnamon, orange peel, and toasted almonds.
Spoon the ricotta mixture into a pastry bag fitted with a large star tip.
Pipe the ricotta mixture into the cannoli tubes.
Garnish with chopped almonds and candied orange peel, if desired.
