Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 3/4 cup cold butter, cut into small cubes
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/4 cup cold water
  • 1 jar dulce de leche

Directions

  1. In a large bowl, combine the flour, sugar, baking powder, and salt.
  2. Add the butter and mix until the mixture resembles coarse crumbs.
  3. In a small bowl, mix together the egg, vanilla, and water.
  4. Add the wet ingredients to the dry ingredients and mix until a dough forms.
  5. Form the dough into a ball and wrap in plastic wrap. Refrigerate for 30 minutes.
  6. Preheat oven to 350 degrees F (175 degrees C).
  7. On a lightly floured surface, roll out the dough to 1/4 inch thickness.
  8. Using a 3-inch round cookie cutter, cut out circles.
  9. Place on a parchment-lined baking sheet and bake for 12 minutes.
  10. Allow the cookies to cool completely before filling with dulce de leche.
  11. To assemble, spread a layer of dulce de leche on one cookie and top with a second cookie. Enjoy!
