Ingredients
- 2 cups all-purpose flour
- 1/2 cup sugar
- 1 teaspoon baking powder
- 1 teaspoon salt
- 3/4 cup cold butter, cut into small cubes
- 1 egg
- 1 teaspoon vanilla extract
- 1/4 cup cold water
- 1 jar dulce de leche
Directions
- In a large bowl, combine the flour, sugar, baking powder, and salt.
- Add the butter and mix until the mixture resembles coarse crumbs.
- In a small bowl, mix together the egg, vanilla, and water.
- Add the wet ingredients to the dry ingredients and mix until a dough forms.
- Form the dough into a ball and wrap in plastic wrap. Refrigerate for 30 minutes.
- Preheat oven to 350 degrees F (175 degrees C).
- On a lightly floured surface, roll out the dough to 1/4 inch thickness.
- Using a 3-inch round cookie cutter, cut out circles.
- Place on a parchment-lined baking sheet and bake for 12 minutes.
- Allow the cookies to cool completely before filling with dulce de leche.
- To assemble, spread a layer of dulce de leche on one cookie and top with a second cookie. Enjoy!
