In a medium bowl, whisk together eggs, milk, salt and pepper. Set aside.
Melt butter in a large skillet over medium heat. Add egg mixture and scramble until eggs are cooked through. Add turkey and cheese and stir until cheese is melted. Remove from heat.
Warm tortillas in a large skillet over medium heat for 1 minute per side. Place about 1/3 cup of egg mixture into each tortilla, fold in edges and roll up. Serve immediately.
