Ingredients

  • 1 pound bow tie pasta
  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • ½ cup cream
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 2 zucchini, diced
  • 2 carrots, diced
  • 1 pound chicken, diced
  • ¼ cup Parmesan cheese, grated

Directions

  1. Bring a large pot of salted water to a boil. Add the bow tie pasta and cook until al dente, about 10 minutes.
  2. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the chicken broth, cream, Italian seasoning, salt and pepper. Bring to a simmer and cook for 5 minutes.
  4. Add the zucchini, carrots, and chicken and cook for 10 minutes, or until the chicken is cooked through.
  5. Drain the cooked pasta and add to the skillet. Toss to combine. Top with Parmesan cheese.
  6. Serve hot.
