Ingredients
- 1 pound bow tie pasta
- 2 tablespoons olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- ½ cup cream
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- ¼ teaspoon black pepper
- 2 zucchini, diced
- 2 carrots, diced
- 1 pound chicken, diced
- ¼ cup Parmesan cheese, grated
Directions
- Bring a large pot of salted water to a boil. Add the bow tie pasta and cook until al dente, about 10 minutes.
- In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Add the chicken broth, cream, Italian seasoning, salt and pepper. Bring to a simmer and cook for 5 minutes.
- Add the zucchini, carrots, and chicken and cook for 10 minutes, or until the chicken is cooked through.
- Drain the cooked pasta and add to the skillet. Toss to combine. Top with Parmesan cheese.
- Serve hot.
