Ingredients

  • 1 pound ground beef
  • 1/2 cup onion, chopped
  • 1/2 cup carrots, chopped
  • 1 teaspoon garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups beef broth
  • 2 cups tomatoes, crushed
  • 1/2 cup green bell pepper, chopped
  • 1/2 cup cilantro, chopped
  • 2 tablespoons lime juice

Directions

  1. In a large pot over medium-high heat, cook the ground beef for about 7-10 minutes, or until it is completely browned. Drain any excess grease.
  2. Add the onion, carrots, garlic, tomato paste, cumin, chili powder, oregano, salt, and pepper. Cook for 5 minutes, stirring frequently.
  3. Add the beef broth and tomatoes, and bring to a boil. Reduce the heat to low and simmer for 15 minutes.
  4. Add the bell pepper, cilantro, and lime juice. Simmer for an additional 5 minutes.
  5. Serve hot and enjoy!
