Ingredients

  • 2 cups Basmati rice
  • 1 whole chicken, cut into pieces
  • 4 tablespoons ghee or clarified butter
  • 2 onions, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon ginger paste
  • 2 tomatoes, diced
  • 2 tablespoons tomato paste
  • 2 tablespoons Al Kabsa spice mix (coriander, cumin, turmeric, cardamom, cloves, black pepper)
  • 1 cinnamon stick
  • 4 cups chicken broth
  • 1/4 cup raisins
  • 1/4 cup slivered almonds
  • Salt, to taste

Directions

  1. Rinse the Basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
  2. In a large pot, heat the ghee or clarified butter over medium heat. Add the chopped onions and cook until golden brown.
  3. Stir in the minced garlic and ginger paste, and cook for another 1-2 minutes.
  4. Add the chicken pieces to the pot and cook until browned on all sides.
  5. Stir in the diced tomatoes, tomato paste, Al Kabsa spice mix, cinnamon stick, and salt. Cook for 5 minutes, until the tomatoes are softened.
  6. Add the soaked and drained rice to the pot, along with the chicken broth. Bring to a boil.
  7. Reduce the heat to low, cover the pot, and simmer for 30-40 minutes, or until the rice is tender and the chicken is cooked through.
  8. While the rice is cooking, heat a small amount of ghee or clarified butter in a separate pan. Add the raisins and almonds, and cook until golden.
  9. Serve the Al Kabsa hot, garnished with the toasted raisins and almonds. Enjoy!
